Prep Time = 10 minutes
- ½ bunch of kale, stems removed
- 1 handful of cilantro, washed and chopped
- Sea salt
- Olive oil
- ½ lemon
- ½ avocado, cubed
- ¼ cup of pomegranate seeds or dried cranberries
- ¼ cup raw walnuts or pecans
- In a large bowl, place kale leaves and sprinkle with about ¼ teaspoon of sea salt.
- Drizzle with the juice of ½ of a lemon.
- Massage the sea salt and lemon into the kale as you break apart the leaves into bite size pieces.
- Once the texture of the kale has changed and the pieces are small, cut up your avocado and toss it into the salad.
- Rinse your cilantro and chop it.
- Add it to your kale.
- Toss in your nuts and drizzle with 1-2 tablespoons of preferred oil.
- Toss the salad and eat.
