Ensalada Gazpacho

Prep Time = 10 minutes

Serves: 4

    • 1 lime, juiced
    • 2 tomatoes, diced
    • 1 sweet white onion, diced
    • ½ c/ cilantro leaves*, chopped
    • 1-2 Kirby cucumbers, chopped
    • 1 Tbsp/ Olive oil
    • ¼ tsp/ sea salt
    • 1 tsp raw honey (optional)
    • 1 pinch red pepper flakes
    • 1 c/ quinoa, cooked and chilled
    • ¼ c/ raisins, currants, or dried cranberries (optional)
    • 1 tsp/ cumin
    • 1 avocado, sliced
    1. Mix all ingredients together and serve with a slice or two of avocado and a squeeze of lime.

*Don’t like or can’t tolerate cilantro?

Replace the cilantro with basil or parsley or mint or all three.
