Watermelon & Heirloom Tomato Salad

  • 2 cups of watermelon, cut in chunks
  • 2 cups of tomatoes, cut in chunks
  • 2 handful of mixed greens
  • 1 cucumber sliced
    ¼ cup parsley chopped
  • ¼ cup peppermint leaves, chopped
  • ¼ red onion, sliced
  • ⅔ tablespoons of olive oil
  • 1 tablespoon balsamic vinegar
  1. Toss salad with olive oil, vinegar, sea salt and pepper.
